  • 12 ounces Johnsonville® Cajun Style Chicken Sausage links (1 package, halved and sliced)
  • 1 green pepper (chopped)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 6 cups chicken broth
  • 30 ounces black beans (2 cans, rinsed and drained)
  • 20 ounces diced tomatoes (2 cans)
  • 2 cups frozen corn (thawed)
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 cup fresh cilantro (minced)

    Directions

    1. In a soup pot, sauté green pepper in oil until tender.
    2. Add sausage and garlic to the pot and sauté 1-2 longer.
    3. Add the broth, beans, tomatoes, corn, chili powder and cumin; bring to a boil.
    4. Reduce heat; cover and simmer for 15 minutes.
    5. Stir in cilantro.

    Oh my goodness...this soup is fab-boo-lust. I'm trying to lose about 10 pounds; this soup is filled with veggies and healthy stuff. I love this recipe. It’s simple an easy to make, I put all the ingredients in the slow cooker while I went to work. I had baked tortilla chips on the side. I place the remaining in plastic storage containers for an easy go to meal later.
