  • 4 pounds beef brisket
  • coarsely ground black pepper
  • kosher salt
  • 2 tablespoons extra-virgin olive oil
  • 3 cloves garlic (peeled and crushed)
  • 2 celery stalks (cut into chunks)
  • 1 carrot (large, cut into chunks)
  • 1 yellow onion (cut into chunks)
  • 2 cups red wine
  • 2 cups beef stock
  • 4 sprigs fresh rosemary
  • 2 bay leaves
  • 4 thyme sprigs (fresh)
  • 1/2 cup mayonnaise
  • 1 tablespoon stone ground mustard
  • 4 rolls (onion, buttered and toasted until golden)
  • 8 slices mozzarella (smoked)
  • slaw (Red Cabbage, recipe follows)
  • 1/4 cup lemon juice (freshly squeezed, about 1 1/2 lemons)
  • 1/4 cup red wine vinegar
  • 1 1/2 tablespoons sugar
  • 1/2 cup extra virgin olive oil
  • 1/4 cup cherry peppers (thinly sliced jarred)
  • 1 shallot (small, thinly sliced)
  • 1/2 head red cabbage (thinly sliced, about 4 cups)
