  • 1 tablespoon olive oil (light flavor)
  • 3/4 cup onions (thinly sliced)
  • 2 carrots (medium size, very thinly sliced into 2" matchsticks)
  • 2 cloves garlic (minced)
  • 3 stalks green onions (cut into 1" lengths)
  • 1/2 cup crimini mushrooms (thinly sliced)
  • 1/2 pound spinach (washed and drained well, I used a large bunch of Japanese spinach, stems removed and chopped bite size. Baby spinach leaves would work as well.)
  • 3 tablespoons soy sauce
  • 3 teaspoons sugar
  • 1 tablespoon sesame seeds

    It was delicious but needed a little more soy sauce. I added some honey too which added some extra flavour. Will make again.

    Turned out great. I added Siracha to the sauce as well as a bit of curry. Left out carrots and added chicken, ginger, lime, and spices (:
