Ingredients

  • 1 knob fresh ginger (diced and crushed or 2 tsp lazy ginger)
  • 3 onions (peeled and chopped into large chunks)
  • 2 tablespoons vegetables oil
  • 2 teaspoons mustard seeds
  • 1 teaspoon fenugreek
  • 3 chillies (sliced, optional - I left these out for the children)
  • 1 handful curry leaves
  • 1 teaspoon chilli powder
  • 1 teaspoon turmeric
  • 2 teaspoons ground coriander
  • 6 tomatoes (or a 400g tin of tomatoes)
  • 400 milliliters coconut milk
  • 4 chicken breasts (sliced into strips)
  • 1 pinch salt (optional)
  • 100 grams spinach

Not the most complex dish I've ever eaten but it's nice if you want something easy but tasty. I added a couple of garlic cloves in with the onion/garlic paste and added extra chillies as we like food quite spicy and the result was great. A lovely, light, easy dish.
