  • 250 grams pork mince
  • 1/4 cup mirin
  • 2 tablespoons light soy sauce
  • 1/4 cup miso paste (from Asian food shops and selected supermarkets)
  • 1 tablespoon chilli paste (from Asian food shops – substitute sriracha)
  • 1 liter chicken stock (good-quality)
  • 2 eggs (at room temperature)
  • 200 grams ramen noodles (dried)
  • 1 bunch pak choy (halved, substitute bok choy)
