This was really good and I suspect it will be better tomorrow. I used almost an entire squash and subbed in a sweet Potato for regular potato. Think white or sweet potato would be great in this. I also added too much potato and squash, so I added more broth which diluted the coconut milk some. It was still great, but I would use less starches next time (basically what the recipe calls for) to not lose some of that flavor. Recipe says add seasoning, only seasoning I added was salt. Also added a bay leaf

Very good I did make some changes. Added a bay leaf, 1/2 tablespoon of curry powder, used half the amount of chayanne pepper the recipe called for, and added a cup of chopped kale
