I've made this twice already and it has turned out AMAZING! The first time I made it I didn't have the scotch bonnet peppers on hand unfortunately. So instead what i did was use regular red peppers (I already had) and some red pepper flakes and cayenne (for the missing heat). The second time I made it, I did it a little different- I added a little ginger, nutmeg and some all-spice as well. Absolutely delicious no matter what! My husband is very picky and he really wasn't interested in the meal but he tried it and loved it!! I made cabbage and the coconut rice and peas (kidney beans) to go along with it. So happy I found this recipe! You won't be disappointed. the meal is so flavorful you will find yourself craving it again and again!

Only Ginger was missing. Adding some slices of fresh ginger and some crushed pimento seeds made it taste just like home
