  • 1/2 cup bell peppers (diced)

  • 3 potatoes (medium, diced, or use white yam)
  • 3 pounds chicken (skin removed & cut in large pieces, leave the bones in*)

  • 3 cloves garlic (minced)

  • 2 stalks scallion (white part only, chopped)

  • 1 yellow onion (or large brown, chopped)
  • 2 tomatoes (chopped)
  • 2 carrots (sliced)
  • 1 sprig fresh thyme (or 1 tsp dried)
  • 1 tablespoon tomato ketchup
  • 2 cups hot water
  • 1 tablespoon hot pepper sauce (to taste, optional)
