Description

Pie doesn't have to be discouraging, and this simple recipe is here to just that. By using pre-made dough you take out the most frustrating and discouraging steps. And if that wasn't already easy enough, the filling is made up of jam mixed with vanilla. This is the pie to make if you are convinced you cannot make pie! A simple egg wash gives the crust a shiny golden appearance.

Ingredients

  • 1 pastry (sweet dough)
  • 370 grams jam (your favorite, apricot jam shown in photo)
  • 1 vanilla pods
  • 1 egg yolks
  • 1 teaspoon water

Directions

  1. Preheat oven to 425 degrees Fahrenheit.
  2. Roll out the dough, spread in a pie pan, and refrigerate.
  3. Gather unused dough, form a ball, and roll out again. Cut into strips with a knife or a small pastry wheel.
  4. Cut the vanilla in half lengthwise, and scrape out the seeds.
  5. In a saucepan, gently heat the jam with vanilla pod and seeds for about ten minutes. Remove from heat. Cool.
  6. Remove the vanilla pod, and pour the jam into the pie pan. Arrange the dough strips on the top, in alternating horizontal and vertical stripes, weaving them in an over and under pattern. Brush the strips with the egg yolk and water mixture.
  7. Bake for 15 to 20 minutes.
