Ingredients

  • cream cheese (1 pkg softened)
  • cheddar (1/2 cup shredded)
  • jalapeno peppers (2 seeded and minced)
  • bacon (4 strips cooked crisp and diced)
  • chicken breasts
  • panko bread crumbs (1 c.)
  • garlic powder (1tsp)
  • onion powder (1 tsp)
  • black pepper (1/2 tsp)
  • parmesan cheese (2 tbsp)
  • egg
  • water (1 tsp)
  • vegetable oil (3-4 tbsp)

Directions

  1. Combine the cream cheese, cheddar, bacon, and jalapenos in a small bowl; mix well.
  2. Cut a pocket horizontally through the thickest side of each breast. Fill with 1/4 of cheese mixture. Secure with toothpicks.
  3. Combine panko, garlic powder, onion powder, pepper, and parm; place on a piece of waxed paper.
  4. Beat egg and water in shallow bowl.
  5. Dip chicken in egg mixture, then into bread mixture, coating well.
  6. Heat oil in a large skillet over medium-high heat. Brown chicken on both sides until golden; place on a foil lined shallow baking sheet.
  7. Bake @ 350 for 20-30 minutes or until chicken is cooked through and juices run clear.
