Spicy twist on meatball recipe!

Ingredients

  • 2 pounds ground beef
  • 1 box Jiffy Corn Muffin Mix
  • 1/4 cup sour cream
  • 1/4 cup milk
  • 1/2 cup sharp cheddar cheese
  • 1/2 cup jalapeño peppers (diced)
  • 3/4 cup diced onion
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • dressing (Western)

Directions

  1. In large bowl combine ground beef, milk, sour cream, cheese, diced onion, diced jalapeño, eggs, garlic powder, salt, pepper, and corn muffin mix.
  2. Mix thoroughly.
  3. Lightly coat 13 X 9 baking dish with non-stick cooking spray.
  4. Shape mixture into meatballs and place in baking dish. (approx 24 meatballs)
  5. Pre heat oven to 350°
  6. Place baking dish on center rack and cook uncovered for 1 hour.
  7. Remove from oven and let stand for 10 minutes for firmness.
  8. Remove meatballs from baking dish and garnish with dab of sour cream, jalapeño slice and drizzle with Western dressing.
  9. Makes 24 meatballs, serves 6 - 8
