Ingredients

  • 1/2 cup white mushrooms
  • 1/2 cup red bell pepper (chopped)
  • 1/2 cup zucchini (chopped)
  • 1/4 cup sliced green onions
  • 2/3 cup quinoa
  • 1/2 cup wish-bone light country italian dressing
  • 1 tablespoon flat leaf parsley (chopped)
  • 1 1/3 cups water

Directions

  1. Bring water to a boil over high heat in 2-quart saucepan. Add quinoa and return to a boil. Reduce heat to medium and cook covered 12 minutes or until water is absorbed. Remove from heat, fluff and let stand covered 15 minutes.
  2. Combine all ingredients in serving bowl. Chill, if desired.
