Looking for something simple to bring to your next gathering? Give these Italian stuffed tomatoes a try! Five simple ingredients come together for a flavor-packed bite. Salty, briny capers are the perfect complement to tuna and anchovies, while mayonnaise adds a bit of tart creaminess. The best part is you can make these ahead of time and store them in the refrigerator until ready to serve.

Ingredients

  • 10 tomatoes (cocktail, depending on size, washed and dried)
  • 1 can tuna (in brine)
  • 4 anchovy fillets (in oil)
  • 1/2 teaspoon capers
  • 4 tablespoons mayonnaise

Directions

  1. Cut off the top of the tomatoes, and set the tops aside.
  2. Gently scrape out the tomatoes, being careful not to pierce the bottom.
  3. Place upside down to drain, on a grill or plate.
  4. Blend the tuna, anchovies, and capers in a food processor fitted with a blade. Pour mixture into a bowl. Add mayonnaise and mix. Fill the tomatoes with the mixture and put the tops or hats back on tomatoes.
  5. Refrigerate before serving.

I made this for a luncheon and it got great reviews. I did add a small bunch of chopped fresh parsley. I was glad to find something that I could make ahead and keep in the refrigerator.
