  • 1 cup chopped onion
  • 1/2 cup red bell pepper (chopped)
  • 1 tablespoon olive oil
  • 4 garlic cloves (minced)
  • 2 teaspoons chili powder
  • 2 cans green chilies (4 ounces each diced mild)
  • 2 cups shredded cheddar cheese
  • 1 cup pepper jack cheese (shredded)
  • 1/2 cup green onion (chopped)
  • 1/4 cup chopped fresh cilantro
  • 4 cups tortilla chips (coarsely crushed, divided)
  • 10 eggs
  • 2 1/2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon hot pepper sauce

    2. Cook sausage according to package directions; cut into small pieces and set aside.
