  • 1 yellow onion (large, diced)
  • 2 stalks celery (diced)
  • 2 large carrots (diced)
  • 1 Tbsp. fennel seed (crushed, not ground fennel)
  • 25 oz. tomato basil pasta sauce
  • 2 1/2 cups water
  • 2 russet potatoes (medium)
  • 1 medium zucchini (diced into half inch pieces)
  • sea salt (to taste, I added just a dash before serving)
