Evidently I did something wrong! :-) Carefully made the layers, freezing each before putting on the next, and they looked great--until they hit the oven. These are delicious, tasting of almonds and butter, but when I cut the bars, they were all one vaguely yellowish color. Did I use the wrong food coloring? I don't know. I decided to skip the ganache and just cut them as almond bars. Maybe I'll glue a sliced almond onto each bar with a dab of icing.

The main name for them is Rainbow cookies.. I call them TRAFFIC light cookies as they are the colors of a traffic light. and since i was a kid someone in my family always gave me a box for christmas (& I'd end up with some from someone before that for my birthday. They originally had the taste of almond paste in between (now some use rasberry, some use apricot) If you can find the Entemen's brand and try them, They are the closest tasting to what the cookies tasted like from the bakeries in the 80s! Also the jam goes between the 2 layers NOT under the chocolate & there was a bottom layer of chocolate as well....

My mom use to make these i have not seen these in years, they are sweet with a little nut flavor punch and i have missed them.
