Ingredients

  • vegetable oil (for frying)
  • 2 pounds russet potatoes (peeled and cut into sticks)
  • 1 1/4 pounds ground beef
  • 1 onion (finely diced)
  • 1 egg
  • 4 slices mozzarella cheese
  • 4 hamburger buns (split)
  • 4 tablespoons pesto (ready-made)
  • tomato slices
  • lettuce
  • basil leaves (for garnish)

Directions

  1. Heat 1 1/2 inches oil to 325°F in a large heavy pot over medium heat. Add the potatoes in batches and fry for 4-5 mins per batch until cooked but not colored. Drain on paper towels. Reserve the oil.
  2. Mix together the beef, onion and egg and season with salt and pepper. Shape the mixture into 4 large patties. Heat a little more oil in a large skillet over medium-high heat, add the patties and cook for 4-5 mins per side for medium. Top with the mozzarella; cover and cook for 1 min until the cheese has melted.
  3. Meanwhile, heat the oil to 350°F. Refry the potatoes in batches for 4-5 mins per batch until golden and crisp. Drain on clean paper towels.
  4. Brush the bottom halves of the buns with a little pesto. Top each with some lettuce and tomato, then a burger and more pesto. Sandwich with the bun tops, garnish with the basil and serve with the French fries.
