  • 1 onion (medium, sliced in half, ends removed skin still on)
  • 8 cloves onion (the spice to taste, poked into the center of the)
  • 1 small tomato
  • 1 dash white wine vinegar
  • 1 sprig sage
  • 1 sprig rosemary
  • 3 sprigs thyme
  • 1 bay leaf
  • 3 tablespoons salt
  • 1 teaspoon pepper corns
  • 6 cups water (see instructions)
  • 2 pounds beef (I used Round)
  • 1/2 cup seasoned bread crumbs (or yolks from three boiled eggs)
  • 1/2 cup white wine vinegar
  • 3 anchovies (optional)
  • 1 teaspoon capers
  • 2 garlic cloves (peeled)
  • 4 1/2 ounces parsley leaves (and stems)
  • 1/4 cup olive oil (and more as needed)
  • 1 teaspoon salt
  • black pepper (to taste)
