Ingredients

  • 4 lemongrass (tough outer layer removed, inner layers finely sliced)
  • 1 teaspoon salt
  • 1 teaspoon caster sugar
  • 6 garlic cloves (finely chopped)
  • 3 cilantro root (fresh, or 6 coriander stems, finely chopped)
  • 1 tablespoon black peppercorns (crushed)
  • 1 tablespoon fish sauce
  • 4 boneless chicken breast (skin on, each cut into 4 pieces)
  • 4 boneless chicken thighs (skin on, halved)
  • 4 tablespoons peanuts (skinless raw, or raw cashew nuts)
  • 3 centimeters fresh ginger root (/1¼in piece, finely chopped)
  • 2 chillies (fresh, seeds removed, finely chopped)
  • 4 shallots (finely chopped)
  • 1 tablespoon palm sugar (or soft brown sugar)
  • 1 tablespoon dark soy sauce
  • 3 tablespoons tamarind pulp
  • 3 tablespoons warm water
  • vegetable oil (for deep-frying)
  • 250 grams firm tofu
  • 200 grams snow peas (trimmed, finely sliced)
  • 150 grams beansprouts (trimmed, rinsed)
  • 1 cucumber (large, seeds removed, finely sliced)
  • 1 sweet pepper (seeds removed, finely sliced)
  • 2 spring onions (finely chopped)
  • 1 handful cilantro leaves (fresh)
