  • 1 rack of lamb
  • 40 grams butter (cold)
  • 2 thyme sprigs
  • 4 sage leaves

  • 50 grams parmesan cheese
  • 30 grams bread crumbs

Directions

  1. Mix all the crust ingredients together to obtain a dough. Rub into the skin of the lamb.
  2. Refrigerate for 1 hour.
