Ingredients

  • 2 pounds lean ground beef
  • 1 tablespoon olive oil
  • salt
  • ground black pepper
  • 1 onions (medium, chopped small)
  • 1 red bell pepper (large, chopped small)
  • 1 poblano peppers (large, chopped small, often called Pasilla peppers in U.S. grocery stores)
  • 1 tablespoon minced garlic (garlic from a jar is fine for this)
  • 2 tablespoons ground cumin
  • 1 tablespoon ancho chili ground pepper (or use more chili powder if you don’t have Ancho)
  • 1 tablespoon chili powder
  • salt
  • ground black pepper
  • 3 cans beef broth
  • 5 1/4 cups homemade beef stock
  • 2 cans petite diced tomatoes (14.5 oz can)
  • 2 tablespoons Tabasco Green Pepper Sauce (or other hot sauce, to add at the end)
  • 2 tablespoons lime juice (fresh-squeezed or fresh-frozen, more or less to taste to add at the end)
