45 minutes in the instant pot is far too long. The pork was overcooked and dry. It was a little bland as well coming out of the pot. The mushroom sauce might have helped but it was very sweet, too sweet for our liking.
I'll look for other recipes before making this again but did learn a bit about best times for a pork loin.

This dinner along with herb and smoked cheddar smashed potatoes and steamed broccoli was outstanding. The carrots were a loss as they were cooked to soft and lifeless point. The sauce is amazing..

I was feeling lazy so I put all ingredients in the pot except corn starch. I tried to thicken after cooking, but not so much. Otherwise, it was excellent!
