    Delicious recipe! I used cheddar as my shredded cheese and small open shell noodles instead of elbow noodles. My kids are soooo picky and they LOVED it! 10/10 will be making again!

    I added too much broth/water, which left the remnants VERY liquidy... so I added a ton of extra sharp cheddar and Monterrey jack/cheddar blend. (and more chile powder.) I think green onions is a great suggestion... I also made the IP Cilantro Lime rice.... https://www.sidetrackedsarah.com/instant-pot-cilantro-lime-rice/. I had my family put rice on the bottom of the bowl, and the enchilada beef 'soup' atop.

    Added extra cheese on top, chives and tortilla strips, delicious!
