I didn't have bacon and it seemed that several people had made this without and it turned out well so I omitted that. And since it seemed the general consensus to serve this over rice I just went ahead and added 3 cups of rice and 4.5 extra cups of water and cubed the chicken. I was also able to drop the corn starch, as the rice provides its own starch element. Cooked it for 8 minutes and it was perfect. A little salt and pepper and viola'! Dinner is served! Next time (and there WILL be a next time), I'll probably add a bag of frozen broccoli florets and then I won't even have to prepare a side dish. When I do this, I may add the bacon for a little added flavor punch.

Delicious. Made it in the crock pot, didn't add any water. The chicken had enough water in it. I did add diced jalapenos and green onions for the initial cooking process. It was a little runny so added the corn starch at about the 4 hour mark. I served as a tostada. I made a slaw of cabbage, green onions, diced avocado and tomato and cilantro. Made a vinaigrette with rice vinegar, honey and the juice of one lime. salt and pepper to taste. my kids loved it and the acid component really cut the richness of the dish.

Delicious! Used chicken stock instead of water and mixed in cooked bow tie pasta at the end. Also left out bacon and cheese, turned out fine without!

Mine turned out a little runny but after looking at the recipe just now I realized I forgot the corn starch. It was still yummy. I will read better next time.

Amazing! We've made this many times and the whole family loves it! We add crushed walnuts for crunch and serve on Hawaiian rolls with a little hot sauce for the adults. this has replaced our chicken salad sandwich recipe as well! Great cold for picnics.

We love it I measure the seasoning by hand not a packet. I do the same with bacon bits.

I like where this is going, but I agree with other reviewers that it is a little too rich. I will reduce the amount of ranch and cream cheese in the future, and I don’t think the added cheese and bacon are needed here. Great with bread, crackers, or tortillas.

This is your typical comfort food: full of cheese and fats. It was a little too rich for my taste and the ranch was a bit overwhelming. To neutralize this I am going to try it over rice tomorrow. For tonight I broke off pieces of bread and dipped it with the chicken, which balanced out the flavors. Overall, it was a breeze to make especially since it was my first time using my pot.

Teenager loved it - no leftovers. New to the instant pot - I did add pasta and a bit more water two-thirds of the way through the cooking time to make this a meal. Turned out great and was requested to make again soon!! Thanks for the instant pot adaptation!!
