Ingredients

1 pound pork loin roast (boneless, cut into stir-fry strips)
1 vegetable oil (teaspoong)
1/2 teaspoon red pepper flakes (crushed)
1 teaspoon fresh ginger root
1/2 teaspoon ground ginger
3 ounces ramen noodles (pork-flavored)
1/4 cup peanut butter
2 tablespoons soy sauce
2 cups slaw mix (cabbage and carrots shredded)
1/4 cup green onions (sliced)

Directions

1Heat oil in a large nonstick frypan; add pork, red pepper and ginger. Cook and stir until pork is done, about 4-5 minutes. Remove pork and keep warm. Cook noodles as directed on package. Drain and keep warm, reserving cooking water. In small saucepan, blend peanut butter, 1/2 cup reserved cooking water and soy sauce together; heat and stir until hot, adding more cooking water if needed. Toss cooked pork, noodles, cabbage, carrots and green onions with peanut sauce. Serve immediately.
