Ingredients

  • 2 pounds beef chuck (seasoned with salt, browned and then cubed, browning optional but I strongly prefer)
  • 1 piece ginger (cleaned and minced)
  • 10 cloves garlic (chopped)
  • 1 1/2 cups red onion (chopped)
  • 7 macadamia nuts (roughly chopped)
  • 1/2 red bell pepper (sweet, chopped, or sub part or all with hot red chile peppers)
  • 1 teaspoon ground white pepper (freshly)
  • salt
  • 3 tablespoons vegetable oil
  • 10 kaffir lime leaves
  • 56 ounces coconut milk (7 cups)
  • 3 cups beef stock (good quality, preferably homemade)
  • 3 carrots (large or 6-7 small, cut into chunks)
  • 8 cloves garlic (chopped)
  • 2 red onion (cupe chopped)
  • 2 red chile peppers (minced, we left out of the kids' portion)
  • 1/2 bell pepper (red sweet, chopped)
  • 1/2 inch ginger (piece of, cleaned and chopped)
  • 7 macadamia nuts
  • sliced cucumber
  • sliced tomatoes (off season I prefer grape tomatoes)
  • lime wedges
  • bell pepper (sliced sweet, that is my addition, to round out meal)
  • jasmine rice (cooked)
