Apart from making sunny side up or boiling these eggs, a popular way of having these eggs is in the form of this spicy curry.

  • 2 onions
  • 10 cloves
  • 1 inch ginger
  • 5 green chilies
  • 2 sprigs curry leaves
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon Garam Masala
  • 2 tablespoons coconut oil
  • 1 teaspoon vinegar
  • salt (to taste)

    Directions

    1. Boil the eggs for 6-8 minutes in a sauce pan with 2 cups of water.
    2. Peel the eggs after they cool completely and set aside in a pan.
    3. Chop the onion, ginger, garlic, tomatoes and green chilies.
