- 2 cups yellow lentils
- 1 Tbsp. grape seed oil
- 1 onion (small, diced)
- 1 Tbsp. ginger (stir-in-paste)
- 1 Tbsp. garlic (stir-in-paste)
- 1 Tbsp. lemongrass (stir-in-paste)
- 1 tsp. Garam Masala
- 1 tsp. salt
- 1 tsp. pepper
- 13.5 oz. coconut milk
- 14.5 oz. stewed tomatoes (can of)
- 14.5 oz. diced tomatoes (can of petite)
- 1 bunch fresh spinach
- 1 russet potato (rough dice)

Directions
- In a pot of boiling water, add the lentils and cook until soft, about 15 minutes.
- Drain and set aside.
- In a skillet on medium high heat, add the oil and cook until warm.
