Ingredients

  • 3 tablespoons vegetable oil
  • 3 chicken breasts (large, skin on, bone-in, or can use boneless)
  • freshly ground pepper
  • kosher salt
  • 1 onions (small, finely chopped)
  • 4 garlic cloves (chopped)
  • 1 tablespoon ginger (finely grated)

  • 2 teaspoons garam masala
  • 2 teaspoons ground cumin
  • 2 teaspoons ground turmeric
  • 1 1/2 teaspoons ground coriander
  • 3/4 teaspoon pepper (cayennne, depending on how spicy, you like it or you can omit)
  • 3 cups low sodium chicken broth (plus a bit more, for thinning, if necessary)
  • 1/2 cup heavy cream (can use a lighter cream)
  • 1/2 pound yukon gold potatoes (small, sliced 1/4″ thick or small fingerlings, sliced in half lengthwise)
