Ingredients

1 shallots
1 carrots
1/2 red pepper
1/2 yellow peppers
1/2 green pepper
250 grams basmati rice
coconut milk (20 cl.)
1/2 can chopped tomatoes
6 teaspoons curry powder
2 teaspoons turmeric
2 teaspoons ginger purée
1 cube vegetable stock
60 grams peas
water (50 cl.)

Directions

1Mince the shallot. Clean and dice the carrot, red pepper, yellow pepper, and green pepper.
2In a pot, combine the basmati rice, coconut milk, shallot, chopped tomatoes, curry, turmeric, ginger puree, vegetable stock cube, peas, diced carrot and peppers, and water. Bring to a boil and then reduce the heat. Simmer for about 30 minutes.
3Once the rice is cooked, mix well. If the rice seems too dry, you can add a little water. Adjust the seasonings if necessary.
