Indian Rice


If you want to try cooking an ethnic dish that is bursting with flavor and is also easy and healthy, then try this recipe for Indian Rice. The aromatic flavors and ingredients in this dish combine to create a dish that is out of this world. After you have had to smell the amazing ingredients of the dish while it simmers, it will be a huge reward to sit down and plate it with the rice and serving it up.


  • 1 shallot
  • 1 carrot
  • 1/2 red pepper
  • 1/2 yellow pepper
  • 1/2 green pepper
  • 250 grams basmati rice
  • coconut milk (20 cl.)
  • 1/2 can chopped tomatoes
  • 6 teaspoons curry powder
  • 2 teaspoons turmeric
  • 2 teaspoons ginger puree
  • 1 cube vegetable stock
  • 60 grams peas
  • water (50 cl.)


  1. Mince the shallot. Clean and dice the carrot, red pepper, yellow pepper, and green pepper.
  2. In a pot, combine the basmati rice, coconut milk, shallot, chopped tomatoes, curry, turmeric, ginger puree, vegetable stock cube, peas, diced carrot and peppers, and water. Bring to a boil and then reduce the heat. Simmer for about 30 minutes.
  3. Once the rice is cooked, mix well. If the rice seems too dry, you can add a little water. Adjust the seasonings if necessary.
