  • 2 inches bread (slices light, made into bread crumbs food processor)
  • 1 can salmon filets (drained with skin and large bones removed)
  • 1 cup broccoli (finely chopped)
  • 1/2 cup onion (minced)
  • 1 clove garlic (minced)
  • 1 teaspoon dijon mustard
  • 1 large egg whites
  • 1/2 lemon (small, juiced)
  • 8 tablespoons light ranch dressing
  • 8 cups mixed salad greens
  • 2 cups grape tomatoes (halved)
  • 4 tablespoons Parmesan cheese (shaved)

    Directions

    1. Preheat oven to 400.
    2. Combine salmon, broccoli, onion, garlic, mustard, bread crumbs, egg white and lemon.
    3. Spray baking sheet with cooking spray and roll salmon mixture into 12 balls. Bake for 20 minutes.
    4. Serve with salad of greens, tomatoes and cheese with Ranch dressing.
