This soup turned out fabulously. Only modification I made was roasting a head of garlic, about 6 or 7 cloves and the onion cut as rings at the same time I was roasting the tomatoes. Then all the ingredients were added to the pot. When cooked I used an immersion blender to purée and served as recommended. Delicious.
