Make these tasty Impossible™ Lemongrass Skewers with meat made from plants that will impress any palate. By Impossible Foods Chef J. Michael Melton.

  • 1 package Impossible™ Burger
  • 1 tablespoon lemongrass
  • 2 tablespoons ginger
  • 5 cloves garlic
  • 3 tablespoons tamari
  • 2 tablespoons sambal
  • 1/4 teaspoon sesame oil
  • 1/2 teaspoon agave
  • 1 tablespoon cilantro
  • 1 tablespoon mint
  • 2 tablespoons hoisin sauce
  • 2 tablespoons rice wine vinegar
  • 3 tablespoons dark brown sugar
  • 1/2 cup crunchy peanut butter
  • salt (to taste)

    Directions

    1. Make the skewers: Mince the lemongrass, fresh ginger, cilantro, mint, and 2 cloves of garlic. Set aside half the ginger for the peanut sauce. Combine the rest with the Impossible™ Burger, ½ teaspoon tamari, ½ teaspoon sambal, sesame oil, agave, cilantro, and mint. Mix until well combined. Divide into 8 equal portions and form into long, flat patties. Rinse the skewers with water and dry them off with a paper towel. Insert the skewers into the portioned Impossible mix.
    2. Make the peanut sauce: Mince the last 3 cloves of garlic. Combine with the remaining ingredients (1 Tbsp Ginger, 3 Tbsp tamari (minus 1/2 tsp), 2 Tbsp sambal (minus 1/2 tsp), 2 Tbsp hoisin sauce, 2 Tbsp rice wine vinegar, 3 Tbsp dark brown sugar, 1/2 cup peanut butter, and salt to taste) until fully incorporated. Set aside to let the ingredients bloom in the sauce. Can be made 24 hours in advance.
    3. Cook the skewers: Sear skewers on the grill 2-3 minutes on each side until cooked to the desired temperature. Serve with peanut sauce on the side.
    4. Serve, share, and enjoy: Makes 8 skewers.
