  • 1 tablespoon vegetable oil
  • 12 ounces Impossible™ Burger
  • 1/2 yellow onion (diced fine)
  • 1 jalapeño (diced fine)
  • 2 cloves minced garlic
  • 1 poblano (diced fine)
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 15 ounces San Marzano tomato (canned crushed)
  • 1/2 cup heavy cream
  • 8 ounces shredded Mexican blend cheese
  • 1/2 bunch cilantro (diced fine)
  • 1 lime (zest & juice)

    Directions

    1. Start the vegetables: In a large pot, heat vegetable oil over medium/high heat.
    2. Add the Impossible™ Burger: Break up Impossible over the hot oil and sear until golden brown. Once cooked through, remove from pot and reserve.
    3. More vegetables: Add onions, jalapeños, garlic, and poblanos. Stirring frequently, cook until soft and aromatic, about 3-4 min.
