Description
Take the concept of crunchy, cinnamon-sugar-coated churro pastries and transform them into frosty summertime ice cream sandwiches. Toasted frozen waffles coated in cinnamon-sugar stand in for the churros, and make perfect wrappers for your favorite caramel-flavored ice cream. - Toast waffles according to package directions.
- Stir together sugar and cinnamon in a shallow bowl or plate. Working one at a time, brush waffles with melted butter on both sides, then dip waffles into cinnamon-sugar mixture, pressing to coat on both sides. Repeat to coat all the waffles.
- Scoop about 3/4 cup ice cream onto each of 4 of the waffles and gently press with a small offset spatula or knife to spread to the edges. Top with the remaining 4 waffles and press gently to allow the ice cream to adhere to the waffles.
- Wrap sandwiches with plastic wrap or foil and freeze at least 4 hours or ideally overnight.
- Unwrap ice cream sandwiches, cut in half, and set on plates or a platter. Drizzle with chocolate syrup.
