Ingredients

  • 1 corn tortilla
  • 1 egg
  • cheese
  • 3 tablespoons mozzarella
  • 2 tablespoons refried beans
  • 1 slice turkey ham
  • salsa (Prepared green, warmed)
  • cooking spray

Directions

  1. Spritz the tortilla on both sides with cooking spray and place into a hot skillet. Cook until golden brown on both sides.
  2. Remove from skillet and spread with refried beans. Top with slices of ham. Set aside.
  3. Fry the egg in a skillet spritzed with cooking spray. Place the egg on the tortilla.
  4. Sprinkle the cheese over the egg and drizzle with the salsa. Serve.

This is a great breakfast dish and I love that elevates the traditional eggs and bacon to the next level. The addition of verde sauce really adds a little kick to pep up the morning. Delicious!
