It took about 20 minutes per pound, not 10! The rest of our dinner got cold by the time we put the loin back in the oven (after it rested 10 minutes) and let it rest (again)

I would suggest using a salt free garlic and herb blend that most stores have in the spice eisle, I rub the entire surface with canola oil and then season with the salt free garlic and herb blend abnd pepper. I rub it in and let the roast sit 10 minutes, then roast on a rack in a shallow pan
