This was such an eye opening recipe and article to read about the dry brine process. I've used this recipe several years now for our Thanksgiving dinner and it never fails in taste and moisture. The turkey always stays very moist, and you can't beat the fact that since there's no liquid mess to clean up, the spices are added days in advance and as long as you place the turkey in the pan you'll be cooking it in, all you have to do on Thanksgiving day is pop it into the oven!
