Description

Classic cornbread spiced up with jalapeno peppers. Pair with Fast and Easy Garlic and Lime Butterfly Pork Chops or New Mexican Pork Stew.

Ingredients

  • 1 cup flour
  • 1 cup cornmeal
  • 1/4 cup sugar
  • 4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 4 tablespoons vegetable oil
  • 2 jalapeno chilies (chopped)

Directions

  1. 1In large bowl, stir together dry ingredients. In a small bowl, beat together remaining ingredients. Stir dry and wet ingredients together to make a lumpy batter, do not overmix; turn into a greased 8-inch square baking dish. Bake in a 425 degrees F. oven for 20 minutes. Serve warm or at room temperature.
