First time making a jelly, and I really enjoyed it. This recipe is easy to follow and produced outstanding results. I used fresh cayenne peppers from a local farm and it's plenty hot, but not too much so (I'm a spicy lover). The onion cuts the sweetness slightly and the apricot cuts the heat just enough. This should be great on a wide range of foods. Thanks!
