Ingredients

  • 200 grams bread flour
  • 30 grams parmesan cheese (grated)
  • 1/2 salt (level tsp.)
  • 1 teaspoon baking powder
  • ground black pepper (to taste)
  • 2 eggs (at room temperature)
  • 50 grams butter (melted)
  • 100 grams milk (at room temperature)
  • 50 grams cheese (Emmental, cut into small cubes)
  • 120 grams hot dogs (cut into rounds)

Directions

  1. Preheat the oven to 190C.
  2. Combine the flour in a bowl with the baking powder, parmesan cheese, salt, and ground pepper.
  3. Beat the eggs lightly in another bowl and add the melted butter and the milk.
  4. Add the two mixtures and beat quickly just enough to combine.
  5. Add the hot dog slices and the Emmental cheese, and stir.
  6. Spoon the batter into the muffin liners and bake for approximately 25 minutes, until lightly golden.
  7. Remove the muffins from the oven and serve warm.

My kids loved having these for dinner. They are perfect to put in a lunch box as something different than the plain old sandwich. Make sure that the hot dogs are cut in small even slices, and butter the baking tin well so that they are easy to get out. Paper cup liners don't work very well for this dish. If you can find the small disposable aluminum liners for muffin tins, those would work well though. I would definitely make them again.
