  • 4 ounces dark chocolate (good-to-excellent quality, I usedGhirardelli 60%)
  • 12 ounces whole milk
  • 4 ounces half and half
  • 2 ounces whole milk
  • 2 tablespoons sugar (or brown sugar, to taste, and completely optional, especially if you're garnishing with marshmallows)
  • 1 egg yolk
  • iodized salt (heavy pinch of non-, kosher, sea salt, etc)
  • base (All of chocolate)
  • 1/4 teaspoon pure vanilla extract (or vanilla paste)
  • 4 1/2 tablespoons powdered gelatin (4 Tablespoons plus 1½ teaspoons)
  • 9 ounces cold water (1 cup plus 2 Tablespoons)
  • 1/4 teaspoon kosher salt
  • 2 1/2 tablespoons instant coffee (I used Medaglia D'Oro)
  • 1 teaspoon coffee extract (optional, but I like the extra top notes. Your call)
  • 21 ounces granulated sugar
  • 2 cups light corn syrup (not sure of the weight on this one)
  • 1/2 powdered sugar (/half corn starch for dusting both the pan and the marshmallow)
  • chocolate sprinkles (Optional: real)
  • chocolate (*or* melted and tempered, *or* melted good quality coating chocolate)
