Ingredients

  • 8 flour tortillas
  • oil (for brushing)
  • 1 tablespoon olive oil
  • 2 green onions (chopped)
  • 1 clove garlic (crushed)
  • 1/2 teaspoon spice (Mexican)
  • 1/2 teaspoon ground cumin
  • 8 ounces ground beef
  • 8 ounces cream cheese (at room temperature)
  • 1/2 cup sour cream
  • 1/3 cup cilantro leaves (plus additional, to serve)
  • 1 tablespoon lime juice
  • lime wedges
  • Tabasco Sauce

Directions

  1. Preheat the oven to 350°F. For the tortilla chips, brush tortillas with a little oil. Cut into wedges and arrange in a single layer on a baking pan. Bake 5-10 mins.
  2. Heat oil in a large skillet on high heat. Sauté onion, garlic, Mexican spice and cumin 2-3 mins.
  3. Add ground beef, brown well, 4-5 mins, breaking up lumps as it cooks. Cool slightly.
  4. Combine beef with cream cheese, sour cream, cilantro and lime juice. Mix well. Serve topped with additional cilantro leaves and a drizzle of Tabasco. Accompany with tortilla chips and lime wedges.
