Sweetened with honey, each bite of cake features the light flavor of orange and a subtle hint of hazelnut. Sprinkled with powdered sugar, this cake is elegant, zesty, and just the right amount of nutty.

Ingredients

  • 140 grams margarine (softened)
  • 140 grams sugar
  • 3 eggs
  • 200 grams flour
  • 1 teaspoon baking powder
  • 80 grams hazelnuts (coarsely chopped)
  • 3 tablespoons honey
  • 1 orange juice (and zest)
  • powdered sugar (for covering, optional)

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Grease a bundt cake mold with margarine and flour. Set aside.
  3. In the electric mixer bowl, beat the sugar with the butter until you obtain a whitish cream.
  4. Add the orange zest and juice, eggs, and honey. Beat once again.
  5. Finally, add the flour with the baking powder, and mix until getting a completely homogeneous dough.
  6. Add the hazelnuts to the dough, and mix with a spoon to evenly distribute.
  7. Pour the mixture in the cake mold, and bake for about 40 minutes.
  8. Check the cooking with a toothpick, remove from oven, and let cool.
  9. When cool, sprinkle the cake with powdered sugar.

This cake recipe was genius! I'm no expert chef, so I would have never thought that orange and hazelnut would work well together at all. I was definitely wrong, so I'm happy I decided to step outside of my box and try this. The orange is there but added just the right amount of zest, so it works with the other flavors instead of overpowering it. The powdered sugar is optional but I recommend it. That and the honey are the perfect additions to the zesty and nutty flavor.
