Hearty and wholesome, these Honey and Tonka Bean Whole Wheat Cookies have a rich combination of flavors. Sweetened with blueberry honey and raw sugar and made with whole wheat flour, these cookies are a healthy option when looking to bake a sweet treat. Flavored with grated tonka bean, these Honey and Tonka Bean Whole Wheat Cookies have a light vanilla flavor in each bite. Prepare the dough the day before you plan on baking the cookies as the dough should chill in the refrigerator overnight.

Ingredients

  • 150 grams whole wheat flour
  • 30 grams butter (or margarine)
  • 30 grams raw sugar
  • 85 grams blueberry honey
  • 1 egg white
  • 1/2 bean (Tonka, grated)
  • salt

Directions

  1. Combine the flour, the raw sugar, a pinch of salt, and the grated Tonka bean.
  2. Add the egg white, the soy butter, and the honey and knead until the dough is uniform in consistency.
  3. Cover the dough in plastic wrap and refrigerate it overnight.
  4. Roll out the dough with a rolling pin and use a cookie cutter of your choice to cut out the cookies.
  5. Bake at 180C for approximately 15 minutes.
  6. Remove the cookies from the oven and let them cool on a wire rack.

This recipe was incredibly unique and very tasty. I loved the whole wheat and the sweet taste of honey enriched throughout the cookies. I plan to bake these 5 star cookies again really soon
