Description

Despite your best intentions, sometimes fruit goes past its prime. That's when banana bread offers the perfect solution. This version, fragrant with cinnamon and sweetened with honey — not only uses up ripe fruit, it does so with panache. Served warm and drizzled with maple syrup, it'll have you buying extra bananas expressly for the purpose of making it.

Ingredients

  • 3 bananas (ripe)
  • 1/2 lemon
  • 1 teaspoon ground cinnamon
  • 180 grams cake flour
  • 4 tablespoons honey
  • 130 grams butter (softened)
  • 2 eggs
  • 7 grams baking powder
  • salt
  • maple syrup

Directions

  1. 1Preheat the oven to 180 degrees Celsius
  2. 2Peel the bananas and add them to a bowl. Mash the bananas, and cover with lemon juice.
  3. 3Add the cinnamon, flour, honey, butter, eggs, baking powder, and a pinch of salt. Mix well.
  4. 4Grease and flour a loaf pan and pour in the mixture into the pan.
  5. 5Bake for 45 minutes and test with a wooden skewer.
  6. 6Serve warm. Drizzle with maple syrup.
