Honey Tea Cakes (Friands)

Friands are small almond cakes, popular in Australia and New Zealand, and are reminiscent to French financiers. Made with a combination of almond flour and wheat flour, these tea cakes are moist and a little spongy in texture. Whipped egg whites are incorporated into the batter for an airy texture. Bake time on these little tea cakes is 10 to 12 minutes. Serve topped with a drizzle of honey and toasted pumpkin seeds.

Ingredients

  • 175 grams melted butter
  • 175 grams icing sugar
  • 50 grams flour
  • 100 grams almond flour
  • 5 egg whites
  • honey
  • pumpkin seeds

Directions

  1. Pre-heat the oven to 175C.
  2. Grease a muffin pan.
  3. Sift the sugar and flour into a large bowl. Add the almond flour.
  4. Whisk the egg whites until firm and gently fold into the flour mixture, a little at a time.
  5. Add the melted butter and 2 heaped tablespoons of honey. Mix all the ingredients together gently.
  6. Fill the muffin molds with the mixture up to half full.
  7. Cook for 10–12 minutes or until the centers are firm to the touch.
  8. To serve, sprinkle with pumpkin seeds and a spoonful of honey.
