  • 1 1/4 cups all purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon apple (or pumpkin-pie spice)
  • 5 tablespoons unsalted butter (cubed)
  • 3 tablespoons honey

Directions

  1. Preheat oven to 350°C. Line two baking sheets with parchment.
  2. Sift flour and spices in a bowl. Using fingertips, rub in butter until mixture resembles breadcrumbs. Add honey and mix gently to form a soft dough. Cover with plastic wrap and chill for 30 minutes.
  3. Roll dough between two sheets of parchment until 1/8–1/4-inch thick. Cut out shapes of choice. Place cookies slightly apart on prepared baking sheets. Chill for 10 minutes.
  4. Bake for 10 minutes, until golden. Cool for 5 minutes on baking sheet. Transfer to a wire rack to cool
