This easy to make recipe uses three different flours to create its denser consistency that will accentuate the flavors of honey, cinnamon, and chocolate. This low sodium dessert packs its fair share of protein and can be enjoyed with a cold glass or milk or a warm cup of coffee or tea. Best of all, this recipe requires but 20 minutes of prep time and then you can let the oven do the rest of the work for you in roughly 40 minutes.

Ingredients

  • 80 grams butter
  • 100 grams sugar
  • 2 eggs
  • 1 teaspoon cinnamon powder
  • 100 grams rice flour
  • 150 grams cake flour
  • 4 tablespoons milk
  • 1 tablespoon honey
  • 100 grams wheat (puffed)
  • 50 grams chocolate chips

Directions

  1. Preheat oven to 170 degrees Celsius.
  2. In a bowl, add the butter and sugar, and stir until until creamy.
  3. Add eggs and cinnamon, and mix.
  4. Add the flours, alternating with the milk.
  5. Add the honey, puffed wheat, and chocolate chips.
  6. Line a rectangular baking pan with parchment paper, grease with butter, and pour in the batter.
  7. Bake for 40 to 45 minutes.
  8. Remove from oven, and let cool.
  9. Cut into small slices.

For this 4 star recipe I added both milk and white chocolate morsels which played well on the palate with the cinnamon and honey wheat. I will be turning out lots of these cakes in the near future.
