Honey Nut and Seed Bars

Ingredients

  • 10 1/2 ounces graham crackers (broken)
  • 2/3 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 2/3 cup brazil nuts (chopped)
  • 3/4 cup dried apricots (chopped)
  • 1/3 cup raisins (mixed, and dried cranberries, chopped)
  • 2 tablespoons sesame seeds
  • 1/2 cup honey
  • 7 tablespoons butter (chopped)

Directions

  1. Line an 8 inch square cake pan with parchment paper.
  2. In a food processor, pulse graham crackers to fine crumbs. Transfer to a large bowl and mix with pumpkin seeds, sunflower seeds, nuts and fruit. Set aside.
  3. Combine honey and butter in a medium saucepan. Stir over medium heat until melted and combined. Let cool slightly then add to dry ingredients and mix until combined. Transfer to prepared pan, sprinkle with sesame seeds and press down firmly. Chill for 1 hour, or until firm.
  4. Cut into squares.
